As Grape season has begun, and Tuscany celebrates the Vendemmia, we take a closer look at this marvelous fruit.

In Europe alone, around 3.5 million hectares are dedicated to the cultivation of grapes, with a production of around 27 million tons of fruit. It is estimated that around 14.5 million tons of grape by-products are generated annually.

The principal component of this “waste” is the pomace of the grape, composed mainly of the fruit’s skin. Even if it is often used principally as compost or fertilizer, the rich composition of polyphenols found in the skin support its use as a source of bioactive phytochemical substances. The presence of anthocyanins and diverse flavonoids have also demonstrated an elevated activity as antioxidant and anti-inflammatory agents.
