Asparagus are rich in folic acid, a B vitamin essential for cell regeneration, able to reduce the incidence of congenital defects in the brain and spinal cord (Spina bifida).

Just five asparagus tips contain an amount of folic acid equal to 28% of the daily requirement, which should be increased by doubling the dose during pregnancy.

The correct intake of folic acid is also very important in the prevention of heart disease: in fact, it manages to regulate the amount of homocysteine in the blood, an amino acid that harms the arteries that carry blood to the heart and brain.

Glutadione, a powerful antioxidant, is also found in asparagus. Glutadione protects high-energy particles from free radicals that rebound in the body, causing lacerations and lesions in the cells.

Asparagus should be stored carefully away from heat and light, ideally at the bottom of the refrigerator or in the vegetable crisper. Folic acid is destroyed in contact with air, heat and light.
